on a healthier note, I have been wanting to make a good salad for a while. I never usually go for salads, so spicing them up with good ingredients is always key for me. this blue cheese, fruit, & walnut salad was perfect for a light dinner.
for the dressing, I made a simple vinaigrette using olive oil, salt / pepper, and a dash of freshly squeezed lemon juice. delish !
